The Butcher of Panzano
Dario Cecchini has been an artisan Tuscan butcher for over 35 years. Being a butcher is in Dario's DNA, as his family
has been in the business for over 250 years. Dario offered a rare opportunity to the International Culinary Academy in New York, to watch a true master perform his art.
In this series Dario will share his history and his tradition, skills and philosophy.

For the last 35 years I have been a butcher, seeking to better myself in my art, and to discover the best cutting and cooking methods for each piece of meat. My goal is to respect the animal by using every part in the best way possible.
In my shop, where hospitality is sacred, you can buy beef, pork, and when in season, lamb.
In my restaurants, where you will dine “in convivio” together with other guests, you have the possibility to appreciate, I hope, the results of my search for quality.
