Does any one have a basic pizza dough formula.

The best idea is to start with a "starter culture". A great resource is "Classic Sourdoughs" by Ed & Jean Wood. Don't think SF sourdough bread. Sourdoughs is a generic term for flour the "polish" - the thick batter like slurry that you add to your flour when making the dough. No sugar is used. You wake up the culture you buy in warm water and flour. I recommend brae flour vs AP. You can use Caputo "00" - which makes a great pizza dough. But - that requires a hot over 800deg+ to zap the pie in 90 sec or so. For most - who can bake at 550-600 - the bread flour works well if you follow good technique. That bakes well in 5-7 minutes.
