"Pecorino di Fossa, a sheep’s milk cheese from the regions of Le Marche and Emilia Romagna, has a unique history and production method and an equally unique flavor. Wrapped in a cheese-cloth sack and buried in underground nests called fosse to age for 3 months, Pecorino di Fossa is typically loaf-shaped and yellow in color with a rich, earthy and persistent flavor. Dense and brittle, Pecorino di Fossa is traditionally enjoyed over pasta. This complex and assertive cheese also partners well with honey, dried fruit, and passito dessert wine.
