Upside-down Whipped Cream Pudding

(whole envelope)
Caramel Syrup
(or fresh fruit)

Directions

  1. 1. Dissolve 1 envelope gelatin in a 1/4 cup of cold water.
  2. 2. Pour the whipping cream into a saucepan; add 1 vanilla bean, cut open, and its scrapings; combine with the sugar.
  3. 3. Heat the mixture and simmer for about 15 minutes.
  4. 4. Remove the saucepan from the heat. Remove the vanilla bean. While stirring, dissolve the gelatin into the hot cream.
  5. 5. Pour the cream into pudding cups that have been rinsed with cold water, and refrigerate for about 3 to 4 hours.
  6. 6. Turn the cream over into the serving plates. Serve either with caramel syrup or with fresh fruits.
  7. 7. NOTE: If the flavor of the plain whipping cream seems too rich, soak the gelatin in 1/4 cup cold Marsala wine and add this mixture to the whipping cream.
